I Viti Winery THE VINEYARD

In the heart of southern Cortona, the vineyards grow on predominantly sandy clay-loam soils, at an altitude between 310 and 320 meters above sea level, with a southeast exposure. This soil and climate are particularly suited to viticulture, where the temperate and constantly ventilated climate favors balanced grape ripening. Significant temperature variations between day and night also help preserve aromas, freshness, and aromatic elegance.

Native and international varieties are grown between the rows, expressing the terroir’s identity and the pursuit of balance: Trebbiano, Grechetto, and Malvasia for the whites, and Syrah, Cabernet Sauvignon, and Cabernet Franc for the reds. This selection combines tradition and contemporary character, expressing authentic wines deeply rooted in the land from which they originate.

The Cellar

The 400 m2 cellar, built in 2013, is spread across three levels.

The ground floor houses the barrel room for aging wine in wood. The containers are filled by gravity from the tanks above to minimize the use of mechanical equipment during the filling of the barrels.

The first floor houses the grape reception area and the temperature-controlled steel tanks where alcoholic and subsequent malolactic fermentation take place. On the same level are the warehouse where the wine is bottled and the customer reception area.

On the second floor there is the tasting room with the barrels containing the Vin Santo fermenting and refining
