Cabernet Sauvignon Cortona DOC

Variety: 85% Cabernet Sauvignon 15% Cabernet Franc

Process

The grapes are harvested by hand, in small crates, with an initial selection of the bunches starting from the vineyard.

In the cellar, the bunches are destemmed, and the berries pass through a vibrating sorting table where they undergo further manual selection to optimize the quality of the grapes used.

Alcoholic fermentation takes place in temperature-controlled stainless steel tanks at a temperature of 26-28 degrees Celsius.

After alcoholic fermentation, a second fermentation takes place, called malolactic fermentation. After this process, the finished wine enters the aging phase in wood, in 2.25 HL barriques. It is then aged in stainless steel before bottling. Once packaged, the wine undergoes further aging in the bottle before being released for sale.
