IGT Toscano Vendemmia Tardiva
Variety: 100% Grechetto
The Grechetto grapes are left to dry on the vine until the first signs of botrytis appear. They are then hand-picked into small crates, and once in the cellar, the whole bunches are gently pressed. After spontaneous cold decantation for 24 hours, the must undergoes alcoholic fermentation in French oak barrels. After fermentation, the wine begins its maturation in wood, remaining in the same fermentation barrel on its lees.
After completing the maturation in wood, the wine is bottled, followed by a period of bottle aging of approximately three months before release.
Appearance: Bright golden yellow color
Nose: Intense, complex, elegant. Candied fruit: apricot, peach, and pineapple; dried lemon; yellow flowers: freesia; nutmeg, cinnamon, white pepper; acacia honey
Paste: Smooth and fresh, with good acidity that offsets the slight residual sugar content.
