Vin Santo Cortona DOC

Variety: Trebbiano, Grechetto, Malvasia

Process

The hand-picked grapes, fully ripe and carefully selected, are left to dry in traditional reed mats. After drying, they are vinified and pressed to extract the must.

After spontaneous cold decantation, the must is placed in 100-liter wooden barrels made from staves made from various types of fruit trees. In the barrels, the must undergoes alcoholic fermentation and maturation in wood. Manual bottling occurs without filtering after natural decantation.
