IGT Toscana Cabernet Franc “Iugero”

PROCESS
The grapes are harvested by hand, in small boxes, with a first selection of the best grapes starting from the vineyard.
In the cellar the grapes are de-stemmed, the berries cross a vibrating sorting table where they undergo a further manual selection to optimize the quality of the grapes used.
Alcoholic fermentation takes place in barriques placed horizontally on rotary monoblocks, in this way the skins is always immersed in the liquid part throughout the fermentation process, daily manual rotations are carried out to allow the best homogenization of the mass. At the end of the alcoholic fermentation the wine remains in maceration with the skins. At the end of the maceration and after racking, malolactic fermentation take place in the same winemaking barrels. After this process, the wine enters the élevage phase in barriques until the moment of bottling. Once packaged it undergoes further refinement in the bottle.

DESCRIPTION OF WINE

Visual: intense ruby ​​red with violet hues

Olfactory: intense, wide, small berries, currants, blueberries and raspberries, closes on cherries in alcohol, blood orange, violet petals, bell pepper, coffee powder and graphite.

Taste: large and persistent sip that denotes great body and harmony.

Pairing: pappardelle with hare ragout, grilled chianina, wild boar in strong sweet.
