PROCESS

The Grechetto grapes are left to dry on the plant until the first appearance of botrytis, they are then harvested by hand in small crates and once in the cellar the whole bunches are subjected to a soft pressing. After spontaneous cold decantation for 24 hours, the must undergoes alcoholic fermentation in French oak barriques. After the fermentation the maturation phase in wood begins, the wine remaining inside the same fermentation barrique with its lees.

At the end of the maturation in wood the wine is bottled, followed by a period of refinement in the bottle of about 3 months before being marketed.

DESCRIPTION OF WINE

Visual: lively golden yellow color

Olfactory: intense, complex, elegant. Apricot, peach and pineapple candied fruit, dehydrated lemon; yellow flowers, freesia; nutmeg, cinnamon, white pepper, acacia honey

Taste: soft and fresh taste, good acidity that well compensates for the light preexisting sugar residue
