Cabernet Sauvignon Cortona DOC
Variety: 85% Cabernet Sauvignon 15% Cabernet Franc
We harvest the grapes manually with case of middle dimension. So we make a first selection of grapes.
After that the process goes on in the winery where the grapes destemmer are on a .table sorting Here, manually, the grapes are controlled again, to improve the quality of the wine.
The alcoholic fermentation begins thermoregulated still tank at a temperature of 26-28 degrees centigrade. After that begins a second fermentation, called malolactic. At the end of the second process the wine is ready to grow up into barriques of 2,25 HL. It follows an aging in steel before bottling and a further refinement after bottling before marketing.

Olfactory: elegant; complicated; red and black fruits (blueberry, blackberry, strawberry); red, withered flowers; green pepper; spice nutmeg; bean
Taste: fresh; intense; perfect balanced of flavour; persistent with tannin. At the end the taste is enveloping
